Caribbean Rush Cocktail

Like most people I look forward to vacation. Having the opportunity to rest and relax is a necessity and helps me maintain my sanity! Being landlocked means that when we want a break, we typically hit the beach.

Now in my perfect world, I’d go to the beach once per month. Unfortunately in real life we are lucky to be able to go a couple of times per year. So when I need an escape, I whip up one of my favorite drinks and just imagine that I am digging my toes in the sand.

A few years ago, my husband and I found a delicious restaurant while we were on vacation in the Virgin Islands. The food was amazing and the drinks were incredible. We enjoyed it so much that we went to that same restaurant twice while we were vacationing.

I found myself thinking about that place for months after we returned. Being in Chattanooga meant that I didn’t have easy access to fresh wahoo or tasty crab. So recreating the meal wasn’t really possible…but I certainly could try my hand at whipping up the drink that we loved so much. After finding the drink ingredients on the restaurant’s online site, I decided to experiment a bit and came up with my version – the Caribbean Rush!

In the summer, I will make a huge portion and put it in a drink dispenser. All my friends come over and we sit by the pool and pretend that we are back in the Virgin Islands. Of course I don’t wait for summer…I’ll mix up a drink every once in a while—whenever I need a little escape!

Ingredients
  • 2 oz coconut rum
  • 2 oz mango rum
  • 1 oz passion fruit juice
  • 1 oz pineapple juice
  • 7UP®
  • grenadine
  • pineapple and cherries for garnish (if desired)
Instructions
  1. Fill a glass with ice.
  2. Add the coconut and mango rum to a shaker with the pineapple and passion fruit juice.
  3. Shake to combine and pour over ice.
  4. Add a spash of grenadine and enough 7UP to fill the glass.
  5. Serve with a wedge of pineapple and a cherry if desired.

    Do you think it would still be yummy with 1 oz of each of the rums instead of 2? My limit is 2 oz at most of liquor per drink. I have never shopped for passion fruit juice. Do most supermarkets carry it? Can’t wait to try it. Regards, Mary Anne

      Yes…it will be super tasty. I find passion fruit juice at my local Publix!
