Pineapple Rice With Lime

Ingredients
  • 1½ cups uncooked long grain rice
  • 20 oz can of chunk pineapple in 100% juice (crush pineapple before use)
  • 1 cup water
  • 1 lime, zested & juiced
  • ½ teaspoon salt
  • 
1/4 cup fresh cilantro, minced
  • 
1/4 cup green onions , chopped
  • 3 tablespoons butter (optional)
Instructions
  1. In a medium saucepan, bring water, pineapple juice, crushed pineapple, lime zest, and salt to a boil.
  2. Add rice, reduce heat to simmer and cook covered for 20- 25 minutes (or until tender).
  3. Remove from heat and stir in lime juice, cilantro, chopped onions and butter.
  4. Adjust seasoning and serve.
