Thai Marinated Cucumbers

Ingredients
  • 2 large cucumbers, peeled and seeded
  • ⅓ cup rice vinegar
  • ¼ cup sugar
  • ¼ cup water
  • ¼ tsp salt
  • ¼ teaspoon pepper
  • 1 teaspoon black sesame seeds
Instructions
  1. Add vinegar, sugar, water, salt and pepper to a small saucepan and bring to a boil.
  2. Remove from heat and allow to cool.
  3. Pour liquid over sliced cucumbers.
  4. Cover and refrigerate for at least 2 hours.
  5. Sprinkle with sesame seeds before serving.
