Easy Black Bean Dip

Serves: 6 - 8 servings
Ingredients
  • 2 cans black beans, rinsed and drained
  • 1 small onion, cut into quarters
  • 1 small fresh jalapeƱo, seeded with stem and membranes removed
  • 1 heaping tablespoon pickled jalapeƱos
  • 2 cloves garlic
  • 2 roma tomatoes, cut into quarters
  • ¼ cup cilantro leaves
  • juice of one lime (about 1 tablespoon)
  • 1 teaspoon cumin
  • pinch of chili powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
Instructions
  1. Put everything into a food processor and blend until smooth.
  2. You may need to use a spatula to encourage everything to move towards the blades at first but once it gets going it should be fine.
  3. Serve with chips or your favorite veggies.
