Potato & Onion Casserole

Serves: 4
  • 3 large Yukon Gold Potatoes, thinly sliced
  • 1 small onion, thinly sliced
  • 4 tablespoons butter, cut into very thin slices
  • 1 packet onion soup & dip mix
  1. Preheat the oven to 350º F.
  2. Butter a shallow casserole dish.
  3. Place a layer of potatoes in the dish followed by few onions.
  4. Sprinkle about a tablespoon of the onion soup mix over the onions and potatoes.
  5. Dot with a little butter.
  6. Repeat the layers two more times.
  7. Bake in a 350º F oven for 45 minutes until the potatoes are golden.
A mandoline will make short work of the potatoes and onions, giving you even slices.
