Simple Chocolate Truffles (German Chocolate & Rocky Road Truffles)

simple-chocolate-truffles-2Valentine’s Day is Friday and if you want to make a special treat for your sweetheart you really need to check out my recipe for Simple Chocolate Truffles.

I have to say, I surprised myself on how great these turned out. I often get ideas in my head and some don’t quite turn out as expected. These were a HUGE success. They were so simple and the resulting truffle was just amazing. What’s even better is that there is no cooking required.

After you mix up your truffle center, you just need to allow it to chill in the freezer for a few minutes. This makes the filling so much easier to work with. A quick dip into almond bark creates a great outer shell that holds in all the yummy filling.

Place each truffle in a paper liner then drop a few into a decorated box. You’ll have a homemade Valentine treat that will make your loved one’s heart skip a beat. They’ll never know you didn’t spend all day in the kitchen.

Ingredients
Rocky Road Truffles
  • ½ cup mini marshmallows
  • ⅓ cup walnuts roughly chopped (+ extra for topping)
  • ¼ cup walnuts, finely chopped
  • ½ cup Hershey's Spreads - I used Chocolate with Almonds
  • 6 oz almond bark
German Chocolate Truffles
  • ⅓ cup pecans, finely chopped
  • ¼ cup mini chocolate chips
  • ⅓ cup sweetened coconut flakes (+ extra for topping)
  • ½ cup Hershey's Spreads - I used Chocolate with Hazelnuts
  • 6 oz almond bark
Instructions
Rocky Road Truffles
  1. Mix the marshmallows, walnuts, and Hershey's Spread in a small bowl.
  2. Use a small scoop and drop by rounded balls onto a piece of parchment or wax paper.
  3. Place the rounded truffle balls into the freezer for about 30 minutes to chill.
  4. Follow the package directions to melt the almond bark.
  5. Dip each chilled truffle ball into the almond bark and place on wax paper to harden.
  6. If desired sprinkle with chopped walnuts.
German Chocolate Truffles
  1. Mix the coconut, pecans, chocolate chips and Hershey's Spread in a small bowl.
  2. Use a small scoop and drop by rounded balls onto a piece of parchment or wax paper.
  3. Place the rounded truffle balls into the freezer for about 30 minutes to chill.
  4. Follow the package directions to melt the almond bark.
  5. Dip each chilled truffle ball into the almond bark and place on wax paper to harden.
  6. If desired sprinkle with shredded coconut.
